  Product Introduction
  LK-X30 is a highly efficient xylanase enzyme preparation which is produced and refined adapting excellent stains through liquid deep fermentation and advanced post extraction process by Lerkam, and it is widely utilized for beer brewing.
  Reaction Mechanism
  As a significant composition of endosperm cell walls in wheat and barley, the xylan has high viscosity, which is usually not able to be utilized by beer yeast strains, leading to too much xylan residues in the saccharide wort, then causing difficulty of beer filtration. Xylanase LK-X30 can act on beta-1,4-glycosidic bonds, degrade the xylan into xylo-oligosaccharide and xylose, and reduce the viscosity of wort.

  The optimum applicable pH rang of this product is 5.5-6.5, and the optimum temperature range is 50-60℃.

  Product’s Function
  Reduce the viscosity of wort, increase the filtration speed, improve the filtration performance and increase the clarity of wort.
  Increase the saccharification production capacity,  increase the fermentable outcome yield, increase the wort extract yield and reduce the production cost.
  Particularly applicable for wheat beer or beer production taking wheat as adjuncts.
  Technical Indexes
  Appearance:lyard or light yellow powder. (There is a little color difference between different batches, but the difference does not represent the enzymes’ activity standard and does not affect the products’ using effect)
  Xylanase’s Activity: ≥30000 u/g (Activity can also be customized on customer’s specific requirement)
  Health Indicator: Implement the national standard GB25594-2010 《Enzyme for Food Industry》。
  Usage and Dosage
  Recommended dosage is 0.1-0.5kg/ton malt. The optimum dosage shall depend on the experiment carried by customer because of the difference of customer’s own saccharification raw material and process parameter.
  Add the enzyme direct or diluted with saccharified liquid at 20-30C into saccharification vessels at the beginning of saccharification.
 Storage and Shipment
  Products should be sealed and stored at 4-25℃ in shady,dry and ventilated place. Avoid the high temperature or direct sunshine during storage and shipment, and avoid solarization and rain. Mixing storage and shipment with hazardous and harmful materials is prohibited.
  In the condition of proper storage and complete unopened package, the enzyme’s shelf life is 12 months.
  Precaution
  Enzymes are proteins. Inhalation of enzyme dust or aerosols can trigger allergic reaction for people with allergic constitution. Direct contact with some kinds of enzymes will stimulate the skin, eyes or mucous membrane. We suggest that workers wear clothes and glove with protective function and protective tools for eyes or face. If the enzymes comes into eyes,nose or mouth, immediately rinse thoroughly with mild water, and see a doctor if necessary.
