LEKenzyme lipase is the food grade enzyme preparation product,which is finely produced/refined through a series of processes include microbial submerged/deep liquid fermentation,ceramic membrane filtration,ultra-filtration concentration,and scientific formulation.This product hydrolyze the natural lipid to fatty acid and glycerol,etc,which is widely applied in production of bread and steamed bun,etc.
For food industry,this product can improve dough tolerance and dough process-ability,enhance the softness and whiteness of flour product,and extend shelf life,improve the organization structure and enlarge the volume,improve the cake structure and make the texture more even and delicate.
The optimum pH range is 6.0-7.5,best pH 6.5-7.5.

Based on 50 000 U/g lipase,the recommended usage is 2-8 g/ton flour(2-8 ppm).The optimum dosage shall be determined by customers based on own processes.
